I love Vidalia onions. They're grown in low-sulfer soil so they're super mild, super sweet, and they don't have any of the onion funk. People like to cook them down because the natural sugars caramelize so nicely, but I find that once they're cooked they don't taste like onion at all. They just taste sweet. So I keep them raw on this one. They get some good color when you cook the pizza, especially because we drizzle the whole thing with some hot honey. It all pairs so well with the smokey Canadian bacon and the dollops of creamy Boursin cheese spread. In truth, Vidalia onions are perfect for people who think they don't like onion.
