Roasted for: Espresso Tasting Notes: Red Apple, Apricot, Orange Country: Ethiopia Region: Guji, Oromia, Uraga Variety: 74112 JARC Process: Natural Elevation: 1900-2300 masl About the Producer Chebega comes from Harowacho village in Ethiopia's Guji Zone, Uraga district, where producer Bisrat Melaku established the operation 14 years ago. The coffee grows in high elevation areas surrounding Mount Quto, with the Seboba River running through the area and contributing to an environment well suited to quality coffee production. Around 40-60 farmers and 400-500 coffee pickers contribute ripe cherries to the Tebe Melge washing station, where careful sorting and processing help maintain the quality and character of the coffee. About the Lot Once delivered to Tebe Melge, ripe cherries are carefully sorted by density and checked for defects before being transferred whole to African raised beds. The cherries dry slowly for 14-16 days, with airflow and temperature carefully managed throughout the process. Drying continues until the coffee reaches approximately 11% moisture, helping maintain consistency while reducing the risk of unwanted fermentation or mould development. The result is a beautifully fruit-forward natural espresso with juicy Red Apple sweetness, ripe Apricot and bright Orange, wrapped in a smooth, rounded body. It's expressive without becoming overly funky, giving us the vibrant fruit character we love from Guji with plenty of sweetness and drinkability.
