Music is one of the best-known Porcelain hardneck garlic varieties, prized for its impressively large cloves, easy-peeling skins, and potent garlic flavor. The bulbs typically produce just a handful of substantial cloves—which means less peeling and plenty of garlic from a single clove. Music also has a wonderful bit of garlic history behind its name. The variety was brought from Italy to Canada by Al Music in the 1980s and became especially popular among growers in Ontario and eastern Canada. Its ability to perform well in cold northern climates helped it spread, and today Music is one of the most recognizable Porcelain garlic varieties in North America. Our Music garlic is organically grown on a small farm in Snohomish County, Washington. Its big, easy-to-handle cloves are particularly convenient when a recipe calls for a generous amount of garlic: crush them into a marinade, slice them into a sauté, mince them into a sauce, or roast the cloves until soft and sweet. Don't mistake its relative mellowness among Porcelain varieties for mild garlic. Raw Music has a pronounced, spicy garlic bite. Cooking transforms it: roasted or baked, the heat softens and the cloves develop a sweeter, rich garlic flavor. Properly cured hardneck garlic should not be refrigerated. Good airflow is important, so avoid sealed plastic containers or other storage that can trap moisture. Hardneck garlic naturally loses moisture as it ages. Because each bag is packed at approximately 1/2 pound when prepared, its weight may gradually decrease through natural drying. The cloves themselves will also become somewhat drier over time. Properly stored hardneck garlic can keep for months. Music and other Porcelain varieties are generally good keepers, but quality will still gradually decline with age. For the best texture and flavor, enjoy the garlic while its cloves are still plump and firm. Seasonal and limited: Once this year’s Music garlic harvest is gone, it’s gone until the next harvest.
