CONDOR RIDGE RANCH - YEAST WASHED - BOURBON

This yeast-washed California Bourbon comes from Condor Ridge Ranch, the oldest coffee farm in California. Warming, spicy, and sweet like an apple tarte tatin, it offers a classic cup with a crowd pleasing profile. Condor Ridge Ranch holds a special place in the FRINJ story. It was there, in 2002, that FRINJ's late co-founder and CEO planted California's first commercial coffee plants. In the years since it has produced some of our finest and most coveted lots, including our submission in the 2026 Dubai Coffee Auction. This California Bourbon was picked at peak ripeness, floated to remove defect, milled, and then inoculated with Saccharomyces cerevisiae. The coffee was then fermented semi-anaerobically for 84 hours, washed to parchment, and then dried on raised beds for 10 days to a stable moisture below 11%.
