Our starting point for this issue are the rivers that cut through landscapes, descend down mountains and, eventually, make their way to the sea. On these journeys, rivers pass through farmland and fields, vineyards and valleys. These rivers both create and sustain life and produce, from the fish that swim within them to the irrigation and nutrients they provide. This is what made the River Issue so interesting, an opportunity to look at the relationships between waterways and ingredients across the world. We’ve travelled far and wide for this issue bringing together some of what we think is the most interesting food culture from across the world.
