Meet the golden cousin of the classic Piloy — Piloy Amarillo is a traditional yellow pole bean from Guatemala, prized for its rich flavor, thin skin, and quick-cooking nature. About ½ inch long, these small but mighty beans are a staple in Caribbean and Latin American kitchens. Toss them into soups, stews, and rice dishes, or enjoy them fresh from the shell. Planting Guide When to Plant: Direct sow outdoors 1–2 weeks after the average last frost, once soil temperatures are consistently above 65°F. Not recommended for indoor starting. Succession Planting: For a continuous harvest all season, sow a new crop every 7–14 days, up to 60 days before the first fall frost. Hot Summer Climates: Sow in March for a June harvest, and again in August for a late September harvest. Harvesting Fresh Use: Pick pods when plump and bulging, before they begin to yellow or dry out. Shell immediately and use fresh, or refrigerate for a few days. Dried Beans: Leave pods on the vine until both the pod and beans are fully dry and hard, then shell and store.
