Cultural Divide: Muscadine & Rosemary
A returning favorite from our yogurt-soured series "Cultural Divide", this fruit-forward tart saison has been kettle-soured over the course of a few days with the live bacteria from 10 gallons of Carolina Culture cow's milk yogurt, then fermented clean with our house saison yeast and infused with over 600 pounds of locally-grown, fresh muscadine grapes from our friends at Benjamin Vineyards here in Saxapahaw, then finished with a touch of lactose (milk sugar) and a couple handfuls of fresh-plucked rosemary from just outside the brewery here in Saxapahaw!
