Sunset Sundae

Sunset in a crunchy cone. Escape with mango, pineapple, vanilla ice-cream and the last rays of the May sun. For June I wanted to create a tropical treat. Introducing Sunset Sundaes. Invented by enterprising soda fountain operators in the 1800s to bypass “blue laws”; today the ice-cream sundae is a quintessential summer indulgence. Take a scoop of creamy nostalgia. Add chunks juicy mango and piquant pineapple. Mix-in crushed ice-cones cones, flakey coconut, swaying palm trees, waves, a bright orange sunset and a drizzle of sticky puree. And after the wettest Memorial Day Weekend in eight decades—this granola is a bowl of escapism!
