His knowledge has been largely empirical, as he has been involved in coffee farming with his parents since he was very young. Motivated to improve the quality of his coffee, he delivered this lot as part of his process of learning and growth. This coffee shows notes of lemongrass, dulce de leche, and green apple. It was produced through 36 hours of whole-cherry fermentation in open tanks, followed by 72 hours of fermentation after depulping. (From Unblended)
