Over the last three decades, the Murray McDavid Team have questioned the normal cask conventions of whisky maturation. Around 75% of a whisky’s flavour will develop from the cask so the team source exceptional casks from the very best vineyards, bodegas and whiskey-makers across Europe and America. Using the very best wood balances the natural character and slowly develops into extraordinary spirit. This is the Art of Maturation. This is inspired Scotch whisky. Glen Spey is one of Speyside’s lesser-seen distilleries, with the vast majority of its production destined for blends. Independent bottlings are relatively scarce, making releases such as this a great opportunity to explore the distillery’s elegant and fruity spirit. For this single cask, whisky distilled in 2007 was finished in Murça Tawny Port casks from Portugal’s Douro Valley. The additional maturation enhances Glen Spey’s naturally delicate character with layers of ripe berry fruits, soft spice and gentle sweetness, while retaining the distillery’s refined Speyside style. Nose: dried berries, chocolate, nut fudge. Palate: juicy plum, cigar leaf, fruity mocha. Finish: sweet oak, mellow floral lingers.
