COLOUR Pale green. AROMATICS Aromas of citrus blossom, green apple, and a lifted floral perfume. PALATE Flavours of lemon zest, sweet floral notes, and fresh natural acidity give the wine a wonderful length, finishing with a crisp minerality. FOOD PAIRING Apple, speck, and arugula salad with aged balsamic WINEMAKING Harvested in the cool hours of early morning and sent straight to the press for gentle juice extraction. After cold settling and racking for clarification, the super-clean juice is inoculated with an aromatic yeast strain. A slow, long fermentation at very cool temperatures helps retain the primary fruit characters and flavours.
