Violets and rose petals lead the nose, followed by red plums and ripe rhubarb, with a distinct menthol and Douglas fir tree note. The palate follows with a homey warmth and velvety tannin, beautiful concentration of red fruit and herbaceous notes, and refined high acidity that keeps the wine feeling fresh and crunchy. This is perfect with a couple degrees of chill in the refrigerator--the vibrant, delicate aromas will absolutely sing in the glass at 15-16 degrees Celsius, with the spicier, herbal flavours taking centre stage as the wine warms--pair with beef stew or cassoulet for a truly magical experience. - Sarah Wright
