Where vinegar meets cacao Our approach is simple: bring the fermented nectar, husks, fresh beans, and their surrounding pulp together. Vinegar provides the acidic base, while cacao brings its naturally occurring plant fats and botanical compounds into the blend. The nectar: Fermented into vinegar, this is the foundation of the bottle. The young beans and mucilage: Before cacao becomes chocolate, the beans nestle inside a soft layer of fruity pulp called mucilage.
