HONDURAS | WILMER GRAU
Wilmer Grau’s coffee is produced in the Intibucá region of Honduras at elevations of around 1600–1670 meters above sea level, where the cool mountain climate creates ideal conditions for specialty coffee production. Wilmer, chairman of the Intibucá collective, grows Bourbon on the steep hillsides of El Zapote and carefully processes each lot at his own mill. This washed coffee undergoes floater removal, dry fermentation, and channel washing before being dried on raised beds. The result is a vibrant, complex cup with notes of blackberry, natural yoghurt, and fresh raspberry, reflecting both Wilmer’s meticulous processing and the unique character of the region.
