At Finca Maracay in Quindío, Luz Helena Salazar has spent over twenty years refining her approach to growing specialty coffee. Producer: Luz Helena Salazar Farm: Finca Maracay Variety: Pink Bourbon Process: Natural Region: Armenia, Quindío Elevation: 1400-1450m Harvest: September-November 2025. Last year we had two memorable coffees from Jairo Arcila - this year we have selected a coffee from Jairo's wife Luz Helena Salazar. Luz Helena has been growing specialty coffee for twenty years and owns Finca Maracay, an 8 hectare farm in Armenia, Quindio. Together with the help of her sons, Felipe and Carlos, Luz has moved to focus on high quality specialty coffee. This is a Pink Bourbon lot, a variety prized for its complex flavours and vibrant acidity. After being harvested with strict ripeness selection, the cherries are floated and hand-sorted before undergoing 45 hours of aerobic fermentation, increasing the coffees sweetness and complexity. The cherries are then spread and dried on raised beds, and carefully monitored to ensure uniform drying and prevent over fermentation. Grown in Quindío’s rich volcanic soil, this is a bright and floral coffee that is testament to Luz's finely honed craft.
