This wine undergoes thermal shock followed by four hours of foot treading in granite lagares. Fermentation occurs in small temperature-controlled tanks, with 10% fermented with the cap. Separate grape varieties are vinified before blending. Aging takes place in 225-liter French oak barrels, 60% new and 40% one-year-old.
