His methods are bee-sensitive and environmentally conscious, favouring natural rhythms over short term high-yield practices. We send this honey to a lab for a "Total Activity" test, which measures antimicrobial potency against Staph aureus bacteria. An Active 25 rating is exceptionally high—comparable to top-grade Manuka honey. The activity is largely due to an enzyme that produces hydrogen peroxide. Please note: the activity level is highest at testing (28.5) and naturally declines over time, especially with light and heat exposure.
