Peaches High on Summertide | 5.9% | 750 ml | Aged Saison on Peaches Seasons wash in like a wave to the shore, first drawing back, and then mounted high, like a wave perched to crash, sweet, full and foaming, an abundance of peaches high on summertide.. Process & tasting notes: The 2025 vintage was blended from three wine barrels of saison, brewed with Canadian pilsner malt, buckwheat and spelt, and hopped with Czech and New Zealand hops. The aroma is like slicing the cheek off a peach from the farmer’s stand in late August; delicate stone fruit, with some light floral notes of gardenia and jasmine that we attribute to Catherina peaches. The one to two years aging in wine barrels contribute light vanillin with a hop bitterness that accentuates the tannic bite of peach skin. The entire blend is a beautifully nuanced reflection of our love for this Ontario-grown peach. Serving suggestions: Enjoy in a white wine glass.
