Our pillowy gnocchi are made with steamed Maris Piper potatoes, 00 flour and egg yolk, served with melt-in-the-mouth beef chuck slow-cooked in red wine, tomatoes and Italian aromatics. Inspired by Tuscan Peposo, a Renaissance-era beef stew traditionally cooked by kiln workers in Impruneta, this is Italian comfort food at its best, simple ingredients transformed by low, slow cooking into a rich, deeply savoury and warming dish.
