En Aparté 2019 is aged sous voile in a 400L barrique. A solera of the 2018, 2019, 2020 and 2021 vintages. Each year, Lise removes 1 hectolitre from the youngest to put back 1 hectolitre from the oldest. It all takes place in the attic of Lise and Bertrand, a masterpiece that oscillates between yellow wine and Palomino Fino. Robust and unapologetically Chenin, with dried stone fruits and fresh hazelnut on the nose, accompanied by hints of cooking herbs.
