NO.311 榛摺 (HARIZURI) Organic Ceremonial Reserved Hojicha Powder — Single-Origin Roasted Japanese Green Tea A blend built around mushisei tamaryokucha, a rare Kyushu-style green tea, gently roasted until the stems turn plump and sweet. Where most hojicha leads with smoke, HARIZURI leads with softness: a mellow, rounded body carried by quiet umami. Delicate enough to drink straight, substantial enough to hold its shape in milk. Why HARIZURI Most hojicha begins with sencha or bancha. HARIZURI begins with mushisei tamaryokucha, a rare Kyushu style in which the final rolling stage is omitted, leaving the leaf curled into a comma shape. The result is a tea with markedly low astringency and a rounder, sweeter character before it ever reaches the roaster. The blend is composed and roasted by Takahashi Seicha in Usuki, Oita, holder of the first organic JAS certification ever granted in the prefecture. The family turned to organic cultivation nearly thirty years ago, after the previous head of the farm fell ill from a pesticide accident. Yields collapsed in the early years and neighbours advised them to stop. They continued. In time the plants themselves grew stronger and the soil came alive with microbial activity. That conviction, rather than the certificate, is what you taste. The leaves are autumn-winter bancha, harvested in October only once the grower judges that the plant has stored enough nutrition, and processed within the same month. The roast is finished in the farm's own style, timed so the stems swell and open, which is where the sweetness in this tea comes from. Tasting Notes Toasted grain and chestnut, a soft caramel sweetness, and a gentle savoury depth that lingers. Very low astringency, naturally low in caffeine. An easy evening cup and a forgiving base for milk drinks. How to Enjoy Whisk 1–2g of hojicha powder with 70ml of hot water (80°C / 176°F). For a hojicha latte, combine with steamed milk of your choice. Its low astringency makes it particularly stable in oat and soy milk. Also excellent in baking, soft serve, and desserts.
