Anima Mundi, Cami del Xops Pet Nat 2024

Variety: Macabeu and Xarel-lo Agusti Torelló Roca is a new producer who is helping to keep the momentum of the New Spain movement going. He keeps himself busy among three different projects all based in Catalunya, although Anima Mundia is based in the Alt Penedes where he uses the family winery and vineyards. The sites here are unique as their location to the ocean is very close and the Garraf Massif mountain range is also near. Anima Mundi comes from a theory by Plato called the “soul of the world,” thereby expressing the soul of Alt Penedes through soil, nature, climate, and human tradition. Made from both Macabeu and Xarel-lo, which are generally used in the production of Cava, but this goes into the natural sparkler known as a pet-nat. Unlike other pet-nats, this one ferments in both steel and French oak before going on to finish fermentation in the bottle naturally.
