11-18 oz. blocks Typically named after the Swiss town of Gruyeres, Wisconsin cheesemakers produce award-winning, handcrafted Gruyere using classic production techniques and handcrafted copper vats. The cheese is made in specially designed curing rooms, where it is kept damp with salt water to continue the surface ripening. Due to the perishable nature of our products, we do not ship over the weekend. Most orders placed Thursday-Sunday will ship the following Monday, unless Saturday delivery is available in your area. We will notify you with a tracking number once your package ships.
