Isomalt (E953) is a food-grade sugar alcohol (polyol) produced from sucrose through enzymatic conversion and hydrogenation. It is widely used as a bulk sweetener in sugar-free and reduced-sugar foods due to its clean, mild sweetness, excellent stability, low hygroscopicity, and good processing performance.
