Filleting Knife Broad Don Carlos

The broad filleting knife from F. HERDER is available in 18 and 21 cm. The blade is noticeably taller than on the narrow filleting knives and ends in a rounded tip.The rounded tip is the decisive difference: when working flat it glides over skin and tissue instead of piercing them. The knife is therefore designed for taking off whole sections, not for piercing.The greater blade height brings stability to the pull: the edge stays straight along its length and does not deflect even in firm tissue.18 cm is the more agile size, 21 cm draws longer, continuous cuts. The green plastic handle is insensitive to moisture and easy to clean.The blade carries the engraving Friedr. Herder Abr.
