In 2012, he expanded to growing more unique varieties like Tabi, Gesha & others. El Encanto happens to be his father, Luis’ favourite farm. Antioquia has traditionally been known for more commercial grade coffees & Juan has been keen to change that over the last decade. THE PROCESS In this region of high humidity and temperature, the biggest challenge is drying coffees. Juan invested in a parabolic dryer that shades drying beds, and tailor airflow and temperature for drying, achieving high quality coffees. The coffees are dried in a controlled environment with temperatures between 25-30ºC for naturals. WHY WE CHOSE THIS COFFEE We have been buying from Luis Saldarriaga yearly through Nordic Approach. We believe his coffees offer a different perspective to how Colombian coffees can be, especially his naturals. Variedad Colombia is also an important cultivar in Colombia’s history, being the first hybrid variety from Cenicafe. This coffee offers a jammy mouthfeel with distinct notes of cranberry, dark honey & chinotto!
