Ever since we first tried Pacamara, we always told ourselves, "we want to roast this coffee one day." Working with such huge beans was a real challenge—getting the heat all the way to the center took plenty of sample batches before we finally hit the sweet spot. This honey-processed coffee comes from producer Rene Aguilar in Chalatenango, El Salvador’s coolest northern region. It starts off with a gentle, blackberry-like acidity and finishes with bright orange zest and sweet praline.
