After purchasing San Jose in 2003, which was their first farm to exceed an altitude of 1,100 meters, they found that the soil composition is similar to that of the Honduran farm, they chose to grow Gesha at San Jose. Natural processing can sometimes cause Gesha to lose some of its delicate characters. But because this coffee undergoes a cold anaerobic natural process, San Jose maintains its distinctive Gesha flavours while also developing the wild, fruit-forward characteristics associated with natural processing. Their philosophy regarding fermentation is to enhance the inherent flavours of the coffee rather than obscure the terroir and natural characteristics of its variety.
