The Picky Chemist - Thiriku Washed
The Picky Chemist is one of my favorite roasters in the world. There is a lot of hype surrounding his drops, but we feel that it's very justified. Stephane has a full time job, and this is really only a passion project for him. We're huge fans of his work and are always thrilled to be working with him. Roast Profile: ultralight. He roasts on a stronghold and has a very light profile. Not quite as light as XLIII or Shoebox, but still decidedly UL with a solid intensity of flavor. My favorite Stronghold profile. Resting Guideline: Stephane doesn't believe in resting, so he does not rest his coffee. In general though, I do rest his coffee 4-6 weeks before brewing. Why did we bring this coffee on? We are delighted to introduce our first Kenyan coffee from the new harvest, a vibrant and generous lot produced by the members of the Thiririka Farmers Cooperative Society in Kiambu County. In filter brewing, Thiririka AA, Lot #004, reveals a delicate and luminous profile. The aroma opens with notes of white tea and white flowers, sometimes accompanied by a gentle milky sweetness or a touch of fine caramel. In the cup, the lively acidity evokes lime and can drift toward a hint of redcurrant, carried by a silky texture and an intense sweetness. The aromatic expression evolves noticeably over the days following roasting: the floral nuances gain precision, the sweetness becomes more pronounced, and the whole profile grows more expressive, especially as the cup cools.
