All farming is considered and done with the utmost respect for nature. Total annual production is only 7000 bottles and we waited a long time for an allocation of these wines. FARMING & WINEMAKING NOTESGianni Storchi is farming following Biodynamic practice. Soils are mainly alluvial, rich in clay and limestone with a high degree of gravel. No chemical weed killers, pesticides or procedures are used in the vineyards. Natural and spontaneous fermentations with no additions and limited use of sulphur. The Perivina is matured in small oak barrels for 24 months before release. Bottled as Colli di Scandiano e Canossa DOC.
