A beautifully finished Ebony handle with a western style feel help to keep this knife feeling precise and controllable despite its length. But the real magic happens in Norfolk. Every single one of these slicers is brought into our workshop and hand-polished on the buffer wheels until it holds our signature 1-micron edge. The result? The knife does the work.
