The Premier Cru Butteaux is one of those terroirs that give birth to the most profound Chablis wines. Located on the left bank of the Serein, it lies on the famous Kimmeridgian marls and benefits from an exposure that allows the Chardonnay to reach perfect maturity without ever losing its natural tension. At Thomas Pico's, this cuvée takes on an additional dimension thanks to a late bottling. This extended time spent on lees refines the texture, gains in complexity and allows the terroir to express itself with greater precision. Today, Butteaux 2018 is entering a magnificent phase of expression. The initial aromas of citrus, fresh apple and white flowers gradually fade to reveal deeper notes of candied lemon, dried fruit, hazelnut and wet stone. The palate combines breadth and energy, driven by a chalky salinity that stretches the wine into a remarkably persistent finish.
