From there it moves to drying, where the temperature is carefully controlled over about 20 days. The cup is spicy and vibrant, with notes of red fruit and florals, a creamy, balanced body, and a sweet, lingering finish. Roaster's notes: A juicy coffee. Big red fruit notes with some toned down tartness in the finish. This has some slight complexities I typically associate with Panama woven in the cup. Big fan of this one. Brewing Notes: V60 Water temp: 90-93C Brew recipe: 0. 18g grounds a tad coarser 1. 60mL bloom (for 40 seconds) 2. 60mL second bloom (until water drains) 3. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides Rest notes: I'd leave it alone for 3+ weeks if possible.
