A classic and beautifully expressive Vaillons, assembled from five separate climats: Epinottes, Roncières, Séchet, Chatains and Beugnons; with vines averaging around 45 years old on the appellation’s characteristic Kimmeridgian limestone. Fermentation takes place with indigenous yeasts between stainless steel and barrel, followed by full malolactic fermentation and around 8–10 months of élevage. White flowers, ripe citrus and orchard fruit meet subtle spice and a distinctive sea-spray character. The palate is generous and approachable yet finely focused, with vibrant acidity, chalky minerality and a pronounced saline edge. A precise, energetic Chablis with lovely depth and a long, oyster-shell finish.
