Essenza Medium Fruity is the gentler face of Frantoio Muraglia — a monocultivar oil pressed exclusively from Peranzana, the elegant olive of northern Puglia. Cold-extracted from an early harvest, it pours a golden yellow shot through with bright green. Where our Coratina is bold, Peranzana is soft-spoken: aromas of fresh almond and green tomato, a rounded, balanced palate, and only a whisper of bitterness and pepper. Its very low free acidity and delicate structure make it the natural partner for lighter cooking — raw fish and carpaccio, steamed vegetables, shellfish, fresh salads, and briefly cooked dishes where a heavier oil would dominate.
