After arriving at the station, the cherries are carefully sorted for over-ripe and under-ripe ones. We then float the sorted coffees to double-check for any over-ripe cherries and floaters. They then go under direct sunlight for 48 hours on raised African beds before being moved to shade for an extended drying period of 30–35 days. Expected flavor notes: Blueberry, strawberry, lavender, and a hint of peach.
