Our rolled turkey breast and leg joint is the perfect solution. No bones, no waste, and Christmas dinner sorted in one box. Our turkey breast joint box pairs a boned and rolled joint — breast and leg meat in every slice — with 24 pigs in blankets, 2kg of our own free range sausage-meat for the stuffing and a litre of proper chicken broth for the gravy. The centrepiece is a Thomas Joseph Boned & Rolled Breast and Leg Joint, where breast meat is filleted from the carcass and rolled together with the leg meat, leaving the skin on the outside. Prepared from one of our free range bronze turkeys raised on open Yorkshire pasture by Edward and Emma, dry plucked by hand and game hung for 10 days. Individually boxed and hand finished, it arrives with vacuum packed giblets (included in the weight), cooking instructions and a packet of fresh herbs. What's in the box? Frequently Asked Questions What is a boned and rolled turkey joint? The bird is filleted off the carcass entirely, then the breast is rolled with the skin left on and the leg meat set inside. You get both the lean breast and the richer, darker leg meat in every slice, with no bones to work around. It's the most straightforward turkey roast there is. What size do I need? The box is sized by the joint, and because there's no bone and no waste you need less than you would with a whole bird: 1.5–2kg serves 4–6, 2–2.5kg serves 6–8, 2.5–3kg serves 8–10, 3–3.5kg serves 10 or more. The trimmings quantities stay the same across every size. Do the pigs in blankets arrive frozen? Yes. Our pigs in blankets are mini chipolatas wrapped in bacon, made here with no preservatives — the same as our sausage-meat — so they're frozen to hold their quality. Defrost fully in the fridge before cooking, then roast at 200°C until the bacon is crisp. How much fridge and freezer space do I need? A rolled joint is the most compact of our turkey options — no carcass, no legs, so it takes up very little fridge space.
