The flesh becomes soft, tender, and intensely sweet as the starches convert almost entirely into natural sugars. When cooked, they develop rich caramel, honey and banana flavours with a wonderfully soft texture. Seasons/Availability: Black Plantains are available year-round. They are simply fully ripened plantains and may continue ripening naturally after purchase. Uses & Flavour Pairings: Black Plantains are perfect for frying to produce sweet caramelised slices known as maduros. They are also delicious baked, grilled or incorporated into desserts and sweet savoury dishes. They pair beautifully with cinnamon, coconut, chocolate, rum, pork, jerk seasoning and tropical fruits.
