The Optimiszt Blanc pairs Pinot Blanc's round, aromatic character with the freshness and mineral drive of Grüner Veltliner. Fermented together in a 1,000-litre old oak barrel, bottled as a pét-nat to capture the natural bubbles, then disgorged without additions of any kind. No fining, no filtration, only the naturally occurring sulphites from fermentation itself. The piggy on the label says it all.
