Bespoke Edition 20.10 Native Beef Shorthorn, Scottish Raised, 90 Days Aged Ninety days on a Beef Shorthorn raised just outside Paisley in the west of Scotland. A proper native breed, aged in house, and exactly the sort of beef we built this page for. The beast in question has been reared on pasture it's entire life with glowing yellow fat (as can be seen in the pictures) - if you, like us, love your grass fed natives, this one is for you! Beef Shorthorn is one of the oldest native breeds in the country and still one of the best eating. It is a slow-maturing animal that does its growing on grass and lays fat down through the muscle rather than just around it, which gives you that fine grain and the natural marbling that native breeds are prized for. It will never match a commercial continental for carcass weight but that's precisely the point, we are looking for flavour, not monstrous steaks. Left untouched for ninety days in our bespoke ageing rooms, this looks and smells the dream!
