Nose: Caramel corn, roasted nuts and a deep, darker sweetness. Palate: Thick and sweet with rich caramel, leather, tobacco and roasted nuttiness. Finish: Kraft caramels and lingering nuttiness with a slightly leathery texture. Aging: Initially aged 3 years, 200 days in new Kelvin Cooperage oak with a Heavy Char / Light Toast. It was then transferred into a used Casey Jones Bourbon cask that previously held their 96% corn, 3% rye, 1% malted barley bourbon and aged for an additional 4 years. Total Age: 7 years, 6 months. Casey Jones "Barrel Cut" — 50% Corn / 50% Cane What it actually is: Not a bourbon, not a rum — a proprietary hybrid spirit that Casey Jones Distillery distills from 50% corn and 50% cane, splitting the difference between a corn whiskey and an agricole-style cane spirit. This is a callback to Prohibition-era moonshining, where distillers cut corn mash with sugar/molasses byproducts to boost yield and proof without needing more grain. The base spirit — Casey's Cut: The unaged version is the original Golden Pond, Kentucky still-crafted moonshine, distilled from 50% corn and 50% cane, bottled at 92 proof / 46% ABV. That's the foundation "Barrel Cut" builds on. The process, step by step: 1. Mash bill: 50% corn / 50% cane — corn brings starch/sugar for fermentable body, cane (likely raw sugar or molasses-derived) brings fermentable sucrose directly, no conversion needed. 2. Distillation: Ground corn is turned into mash, each batch personally cooked and loaded by the crew, run on the handmade copper square pot still AJ's grandfather designed — this is a single-run pot still process, gallon-by-gallon, hand-cut for quality. 3. Cutting the run: Every gallon that comes off the still is separated and only the moonshine that meets taste/quality standards makes the cut — classic heads/hearts/tails selection done by hand rather than automated cut points. 4. Barreling: Casey's Cut moonshine is then aged for a spell in a charred white oak barrel to become Barrel Cut, in small batches even smaller than the base spirit. 5. Variants exist: There's also a "Barrel Cut Double Barrel" — first aged in new oak, then finished in used bourbon barrels, up to 4 years, bottled cask strength at 80-117 proof.
