Polaris 4.3 Vintage Mash Bill Irish Whiskey 700ml 52.5% ABV
Two Stacks Polaris Collection 4.3 Polaris 4.3 takes us in a new navigational direction, exploring Vintage Mashbill No. 9. A forgotten Irish whiskey recipe recovered from the archives by whiskey historian Dr Fionnán O’Connor and brought back to life by the team at Boann Distillery. Rooted in Ireland’s historic distilling traditions, this distinctive mashbill combines 40% unmalted barley, 30% malted barley, 15% oats, 10% wheat and 5% rye, offering a glimpse into the diversity of grains once used by Irish distillers. Fully matured in a single Oloroso sherry hogshead, this rare release is limited to 220 bottles in circulation. Building on the Polaris collection’s exploration of Ireland’s whiskey-making past, Polaris 4.3 brings a different historic grain recipe into the glass, preserving a forgotten chapter of Irish distilling heritage through a rare, single-cask release. Tasting Notes from sipping this whiskey directly from Dr Fionnan O'Connor in the Sperrin Mountains, Oct 27th in front of a turf lite fire) Nose: Orange peel, Club Orange (the whole spritzed Club Orange-to-Tanora spectrum, really,) but beneath that, a fatter and alluring current of Twix and Rolo caramel from the sherried wheat. Even a bit of bread. Then wet bark, cinnamon stick, and clove oil from the sherried wood. Ginger biscuit. Custard… lots of custard… pith-tinted pot still grasses, golden syrup, and some old sultanas. This is sunbaked pot still— warmly citrine, visceral, and still more warm with every pinch of bakers’ spice. Palate: Roll-on, unmalted oils, big oaten creams, and wheaten caramels! And all of them beneath deep, buoyant, figgy sherry waves. A warm, textural, treble-and-bass cleft Irish pot still full of bread-and-butter pudding, sticky toffee, spent barley, and old leather round the herbal spice and allspice. Muscovado sugar. Lovely gourds. Finish: Genuinely tastes like Fig Rolls, soft crumbly biscuit, figgy bits, and all… Toasted oak. Vanilla pound cake, French toast (with cinnamon) and herbal oils. I could pour this over pancakes, but it’s ultimately autumnal: dusted cinnamon and Boann gourd, though the gourd is now a cornucopia full of fleshy textures, dustings, oats, wheat, unmalted barley, malt, and rye… all doused in Oloroso goodness. Polaris 4.3 is an invitation to explore the diversity of Irish whiskey through the lens of its past, challenging convention, rediscovering forgotten recipes and creating something entirely distinctive for today’s whiskey drinker. Part of the Two Stacks Polaris Collection, where Ireland’s whiskey heritage meets independent thinking and a spirit of experimentation. Sláinte.
