Product Description Detailed Specs Measurements We’ve always believed that the best knives are born from the right relationships. The Ginrei series is a collaborative project between @jknifeimports @hijodereina and @shihanfineknives. This new chapter is especially meaningful as it marks the beginning of Josh’s training under Shehan’s tutelage. Made from solid 52100 carbon steel with a kurouchi, hammered finish, these knives combine great performance with a handsome, rustic look. Each knife is fitted with a handmade mesquite handle from the New Mexico area. The natural beauty of the wood pairs well with the kurouchi finish and provides a comfortable grip. Originally developed for ball bearings, 52100 is known for its fine grain structure, good edge retention, and excellent toughness. As a carbon steel, it will develop a patina with use and requires basic care to prevent rust. We have found these knives to be easy to sharpen, capable of taking a very keen edge, and a pleasure to use. They are ground thin behind the edge, which helps them move smoothly through dense foods. At the same time, they retain a bit more thickness at the spine, helping with food release and giving the knife a solid feel in use. Ginrei knives are forged, ground, and finished at Shehan's forge in Santa Fe, New Mexico.
