We use only chicken thighs, marinated overnight in red wine and aromatic herbs, then braised low and slow with sautéed garlic, onions, tomato paste, bacon, more wine, and a splash of cognac for rich, deep flavor. After hours of simmering, the chicken becomes fall-apart tender. To finish, we add sautéed mushrooms (packed separately to preserve texture and for those who do not care for mushroom ), carrots, and pearl onions. All alcohol is fully cooked off, making it perfectly family-friendly. Served with creamy mashed potatoes, this dish is a true taste of the French countryside.
