50% Xarel-lo, 40% Macabeo, 10% Parallada Region: Castellví de la Marca Seven generations of the Bolet family have cultivated vineyards across Penedès, but did not bottle their own wines until the 1980s. Today, their vineyards are farmed organically and their wines are made with minimal intervention. A blend of 50% Xarel-lo, 40% Macabeo, and 10% Parallada, this bone-dry Cava has notes of apple, brioche, and citrus. Refreshing and crisp with a round, elegant finish, it makes a great pairing for a tapas spread of jamon serrano, manchego, and marinated anchovies.
