Okumidori and Jyu are early harvested from the top of the plant, meticulously hand-picked to ensure the youngest and most tender leaves, resulting in bright green hues and flavours ranging from smooth sweetness to delicate umami. Take grade, harvested from upper to middle plant parts, employ a combination of hand and machine picking, offering deeper green tones and robust flavours with pronounced umami richness. Ume grade, harvested later from lower plant sections primarily by machine, boasts a dark green appearance and a bold, slightly bitter taste characteristic. Each grade's distinct characteristics offer robust, bitter flavours, representing the renowned Yame matcha from Fukuoka Prefecture, with an increasing umami richness.
