His coffees are often honey processed, a method in which the beans are sun-dried in their mucilage to develop a more intensely sweet and fruity flavor. This combination of terroir, processing, and the prized Pacamara cultivar produces the flavor profile presented here: a syrupy body with complex floral aromas and tart fruit acidity. This coffee was love at first sip, and at the cupping table we knew it had to be in our lineup.
