Available on Fridays and Saturdays of May 2026 This pastry is composed with a croissant dough filled with a rhubarbe compote with pieces of rhubarb. It is all covered with a crème anglaise infused with shiso, then whipped with a mix of cream cheese and mascarpone, and covered by a rhubarbe veil.
