They’re named for their deep red color and the distinctive paired wattles (tassels) that hang from the neck. Conservation status: Listed as Threatened by The Livestock Conservancy (formerly ALBC). Why we raise them: Red Wattles are hardy foragers that thrive on pasture and are known for rich, well-marbled, flavorful pork.
