Jean Yves Peron, 'Cotillon des Dames Reserve' 2020

Variety: Jacquere, Altesse, Roussanne Jean-Yves Peron is a Savoie native who studied oenology in Bordeaux. He honed his craft in Cornas and Alsace, where he studied under Thierry Allemand and Bruno Schueller respectively. Their mentorship sculpted his biodynamic farming techniques and low-intervention approach to vinification. No inoculation occurs as all native yeasts are used to ferment the wines. His reds tend to be made carbonically and his whites see long maceration. After learning in Cornas and Alsace, Peron returned to Savoie in 2004 and set up shop in Chevaline to farm some of the steepest slopes in France. However many of these elusive vines are over 100 years old, so the mountain trek is more than worth is for the quality of grapes on these slopes.
